Roasted Fig and Goats Cheese Ice Cream

Ingredients

1.5 cups double cream1.5 cups milk2/3 cup sugar10 egg yolks225g goats cheese240g figs2 tbsp balsamic vinegar1 tbsp brown sugar
Heat cream, milk and sugar until simmer
Whisk egg yolks
Slowly add milk
Return to pan and stir constantly until thickens
sieve over the top of the goats cheese
Whisk together until smooth
Add a pinch of salt and brandy
Cool over an ice bath
Refrigerate
Quarter the figs, coat with 1 tbsp vinegar and the sugar
Heat oven to gas 6
Cover figs with foil and roast for 20 min until soft
Blend figs to puree, adding more vinegar if desired
Freeze bowl
Churn custard mixture
put a layer of ice cream, then a layer of puree until used up, finishing with puree
Use a sharp knife or skewer to marble the puree and freeze
