Ingredients
Mash banana with fork very well. If you do it in processor try not to make it to liquid. Then add in two eggs beat together. You can add in a pinch of baking powder to help make it fluffier and I added in vanilla extract and cinnamon for flavor. Then pour in hot pan and cook as you would regular pancakes. Can add whatever you want for toppingsEx: butter, syrup, peanut butter, almond butter, maybe add fresh blueberries in with batter.
Directions
Pour in hot pan/griddle and cook like regular pancakes
For me it makes about 4 pancakes about 3-4 inches in diameter
