Prosciutto Almond Asparagus

Ingredients
1 TBS olive oil2 oz prosciutto cut crosswise into strips1/3 c (40 g) sliced almonds3/4 c (180 ml) fresh orange juice3 TBS red wine vinegar1 tsp corn starch2 lbs fresh asparagussalt pepperorange zest
Directions
Preheat a 10-12 inch omelette pan over medium heat until rim is hot to touch
Add oil & wait 1 minute then add prosciutto and cook stirring often until browned (about 4 min). Remove from pan and drain on paper towels
Add almonds to pan, stir until golden (2-3 min). Remove from pan and drain on paper towels. Discard oil from pan
In a small bowl mis OJ, vinegar, cornstarch, grated orange zest until smooth. Pour into pan. Increase heat to high and cook stirring often until sauce is bubbly (1 min) Pour into serving gown and keep hot.
Rinse pan, place asparagus in pan; add 1/2 c water. Cover & bring to boil (about 7 min) stirring halfway through cooking. Drain and place on a platter. Pour orange sauce over asparagus; top with prosciutto and almonds; season with salt and pepper to taste
