Bell Pepper Fritatta

Ingredients
1 dozen large eggs4 bell peppers diced3 oz milk4 Tbsp sour cream1-2 cups shredded cheddar cheesesalt & pepper to taste
Directions
Dice peppers and drop into boiling water to precook for about 3-5 minutes then remove and drain THOROUGHLY then spread evenly in the bottom of a 9X13 baking/casserole dish. Mix eggs with remaining ingredients - except cheese -adding sald and pepper to taste as well as onion powder if desired. Pour egg mixture over peppers and then sprinkle cheese evenly over mixture. Place in oven on broil until the top begins to set then turn oven to 350 and cook until pic comes out clean. Tastes great when served with salsa.
