Ham, egg, cheese cups! Very low carb!

2 Brown cage free eggs (or regular eggs or egg whites)4 slices of deli ham (I used Hormel Natural Choice Honey)1/3 of a cup of reduced fat fiesta blend cheese1 tablespoon of diced onionssalt and pepper to taste
First you can use a muffin tin, or small casserole dish. I used a small casserole dish and used aluminum foil to form the bowls.
Place to slices of deli ham in the shape of a bowl in your mold of choice.
Then crack and add the egg on top of the ham
sprinkle with salt and pepper and bake at 375 for 15 minutes
Take out of the oven and sprinkle with the cheese and bake for another 3 minutes or until the cheese is melted.
The whites should be set, the yolks solid but not firm :)
Serving Size: Makes 2 Ham, egg, cheese cups
