Autumn Vegetable Soup Clean-Living Recipe

1 medium onion2Tblsp Light Extra Virgin Olive Oil6 cloves garlic3 carrots3 celery stalks1 red bell pepper2.5 cups Sweet potato2 cups Kale w/ stemsS&P to taste4 cups good vegetable brothEither Italian herb mix or Dill weed or Both(!) to taste
On medium low, add onion to oil and a dash of salt. Sweat out the onion until starting to get soft. About 3 mins. Add half garlic, at same temp for same timeframe, cook likewise. Then add in both chopped carrots, and bell pepper with a bit of salt. Stir, leave for about 4 mins. Change temp to medium and add chopped celery and sweet potato, stir in a bit more salt and cook for 10 mins. Stirring occasionally. Add Kale, spices and broth and cook on medium low for another 10 mins & you are set!!
Serving Size: Makes 4 servings of approx. 2 cups each!
