Erica's Rustic Cornbread (flourless)

2 cups Cornmeal (white is preferable)2 eggs1 3/4 cups whole milk1/4 cup lemon juice1/4 cup honey1 tsp baking soda1 tsp baking powder2 tbsp butter2 tbsp bacon grease
Preheat oven to 425
Combine milk and lemon juice to create buttermilk and let sit.
Put butter and bacon grease in 13x9 inch pan and melt in oven.
Combine eggs, cornmeal, honey, baking powder and soda, and buttermilk mixture in a stand mixer or bowl and wisk for about a minute.
Take pan with melted butter/grease out of the oven Pour the remaining grease/butter into the cornmeal mixture while stirring.
Bake for about 30 minutes or until it is baked through.
Serving Size: Divide into 16 pieces
