Wheat-free Sugar-free Banana Nut Muffins

Ingredients
3 3/4 c. barley flour1 c. dry skim milk powder3 tsp. baking powder2 tsp. baking soda1 tsp. salt3/4 tsp. stevia (equal to 3/4 c. sugar)2/3 c. skim milk (liquid)1/2 c. honey3 c. mashed bananas (6-7 medium)1/2 c. canola oil3 large eggs1 tsp. vanilla extract1 c. chopped walnuts
Directions
Makes ≈30 muffins (2.5 dozen)

Combine all dry ingredients in a large bowl.

Add all wet ingredients to a blender and blend until smooth.

Stir wet and dry ingredients together until almost mixed; add nuts. Stir until just mixed.

Scoop into muffin pans; bake at 350ºF for 20 to 23 minutes.
