Turkey and Black Bean Chili

4 teaspoons Extra Virgin Olive Oil2 onions, chopped2 green bell peppers, seeded and chopped8 garlic cloves, minced1.5 pounds ground turkey, 93% fat free2 (15-ounce) cans black beans, rinsed and drained2 (14..5 ounce) cans diced tomatoes2 tablespoons chili powder4 teaspoons ground cumin2 teaspoons dried oregano1 teaspoon salt
- Heat the oil in a large nonstick saucepan over medium high heat.
- Add the onion, bell pepper and garlic; cook, stirring occasionally, until softened, about 5 minutes.
- Add the turkey and cook, breaking it apart with a wooden spoon, until no longer pink, about 3 minutes.
- Stir in the beans, tomatoes, chili powder, cumin, oregano and salt; bring to a boil.
- Reduce the heat and simmer, covered, until the vegetables are very tender, about 30 minutes.
*Makes 8 1-cup servings. Very filling and good for leftovers!
