Butternut Squash and Carrot Bisque

6 Cups Butternut Squash - cubed4 cups Carrots (or baby carrots) -- sliced1.75 cups chopped Onion1 Quart Imagine No-Chicken Broth -- Low Sodium1 QUart Imagine Vegetable Broth -- Low Sodium1/2 cup Half & Half1 TB Nutmeg2 tsp White Pepper2 TBS Earth Balance Spread
Melt Earth balance in a pot. Cook Onions for 2-3 minutes... add the Squash and Carrots and cook for an additional 4-6 minutes.
Add Broths... bring to a boil then bring down to a simmer for 35-45 minutes until the vegetables are very soft.
Using an immersion blender, blend until desired smoothness.
Add Half and Half and spices. and stir well.
