Mini German Pancakes

8 large eggs1 1/3 cup milk (used unsweetened almond/coconut blend milk)1 1/3 cup flour1/4 tsp. salt
Preheat oven to 425.
Spray muffin tins (18) with cooking oil spray.
Beat eggs well, add milk and beat--just use a hand whisk.
Add flour and salt.
Mix together, but don't over beat. Batter will still be lumpy.
Pour in to muffin cups.
Bake for 18-25 minutes depending on fullness of cups and how done you like your pancakes, and the darkness of your muffin tins.
Serving Size: Makes 18 muffin sized servings
