Poached Cod in Tomato Broth

3 cups Chicken Broth1/2 cup Red Onion Raw 11 oz cherry tomato8 oz fingerling potato3 sprigs Basil1/4 tsp red pepper flakes16 oz Cod 1 tbsp lemon juice
1. Bring broth, onion, 1 1/2 cups tomatoes, potatoes, basil sprigs, red-pepper flakes, and 2 tsp salt to a boil in a large, deep, straight-sided skillet with a tight-fitting lid. Reduce heat and simmer, uncovered, until potatoes are crisp-tender, 6-8 minutes.
2. Season code with salt and pepper, add to broth mixture, and cover. Simmer until fish is opaque throughout and just cooked through, about 7 minutes.
3. Remove and discard basil sprigs. Add remaining tomatoes and lemon juice, gently stirring to combine; cook until just warmed through.
