Pheasant Casserole

2 Cups, Onion, chopped.3medium slices bacon, chopped.1 tbsp extra virgin olive oil.4 Peasant breasts.0.25 cup floursalt & pepper to season.3cups home-prepared beef stock.
1.Dry fry onions until transparent add bacon cook through then place in a casserole dish.
2.Mix flour & seasoning, use to coat pheasant breast. Fry off pheasant in oil until meat is sealed, place in casserole dish on top of onion mix.
3.Pour stock over, cover.
4.Place in oven (@190c, 375F) cook for 2 hours approx.
Can also follow steps 1-3 & place every thing in a crock pot & cook on auto for about 9hours.

Thanks for the recipe. My husband only shot one small pheasant, so I added some chicken tenders in with it. It turned out like a nice stew. Next time I might take away part of the stock and add a little wine for different flavoring. It's hard to find recipes for wild birds, so thanks again!
