My Favorite Blueberry Pancakes

Ingredients

1 cup milk1/2 cup water1 tsp vanilla1 cup whole wheat flour1/2 cup stone ground cornmeal1 tsp baking powder1/2 tsp baking soda1/4 tsp saltcinnamon and nutmeg to preference (optional)1-2 cups blueberries1 tsp canola oil (or nonstick cooking spray)
Combine milk, water and vanilla in a small bowl
In a large bowl, combine flour, cornmeal, baking powder, baking soda, salt, and spices. Stir in the wet ingredients until just combined. Fold in the blueberries and let the batter sit for a few minutes.
Lightly oil a griddle/skillet with the canola oil or non stick spray and heat over medium. Pour 1/4 cup of batter unto the griddle and cook until pancakes are bubbly. Turn and cook until pancakes are brown.
Makes about 6 servings (2 pancakes per serving)
Serve warm with syrup or jelly if desired
