Slow Cooker "Cream" of Roasted Cauliflower Soup

Ingredients
1-2 cups water1 large head cauliflowerskim milk to cover (about 3 cups)1/4 tsp kosher salt (or to taste)'=fresh ground black pepper to taste
Directions
roughly cut cauliflower and add it to crockpot with 1-2 cups water. cover and cook on low 4-6 hours, of until cauliflower is soft and starting to brown where it touches the sides. Add milk to almost cover and puree with immersion blender until smooth. Add salt and/or pepper to taste.
