You also need salt, pepper, and dried herbs of your choice. I like smoked salt, freshly ground black pepper, dill and garlic pepper. I also like to replace some or all of the olive oil with lemon infused olive oil.
In large skillet, heat oil over medium heat. Add leek, cover, cook about five minutes. Add carrots (grated) cover and cook about five minutes.
Add remaining ingredients. Cook, uncovered, about 10 minutes, stirring occasionally, until browned. I cook it a lot longer to get it nicely browned.
