2 onions, chopped2 green peppers chopped3 medium stalks celery, diced1 Tsp. canola oil4 cups beans (any variety) cooked from dry (no salt added)2 8-oz cans no-salt tomato sauce2 28-oz. cans no-salt tomatoes1 14-oz. corn1/2 tsp. salt1 Tbsp. chili powder1 Tbsp. dry cocoa1/4 tsp. paprika1/4 tsp. cayenne1 1/2 tsp. cumin2 tsp. garlic powder
Cook onions, green pepper, and celery in oil in a large pot until tender. Stir in tomato sauce, tomatoes, corn, and seasonings. Heat to boiling. Reduce heat and simmer uncovered for 30 minutes. Add beans.
