1 cup Zucchini, sliced1 cup Yellow Summer Squash, sliced1 cup cooked Brown Rice0.25 cup cooked Lentils1/2 medium white onion, sliced1 clove garlic0.33 cup sweet red peppers, diced1 Tbsp. Grape seed Oil
Steam brown rice and lentils according to package directions. Set aside. Prepare vegetables and sauté gently in grape seed oil until crisp-tender. Prepare grilled fish or meat. Add brown rice to sautéed vegetables and serve warm. Brown rice pilaf is also good served cold with fresh vegetables and lite salad dressing for a vegan meal.
