DRY INGREDIENTS:1/4 cup(28g) coconut flour1 tsp cinnamon1/4 tsp nutmeg ( a pinch)1/4 tsp pumpkin spice (a pinch optional)1/2 tsp low sodium salt1/4 tsp baking sodaWET INGREDIENTS:1/4 cup (60g) pumpkin3 tbsp (45g) almond milk (i used unsweetened silk)1 tbsp honey3 lg eggs (about 145g)1 tbsp coconut oil (melted)1 tsp vanilla
In small bowl mix dry ingredients together, set aside. In larger bowl whisk together wet ingredients until blended. Add dry ingredients to wet ingredients and whisk together until most lumps are gone. Heat griddle or pan to medium and coat with either coconut oil or spray. Use large serving spoon to spoon batter into pan and spread out a bit. Cook on each side 2 to 4 minutes.
