Easy Egg Vegetable Muffins

5 Eggs Tuna, Canned in Water, drained, 1 can Carrot - raw, chopped, 1 cup 1 cup onion choppedOlive Oil, 1 1tsp Spinach, fresh, 3 cup You can substitute or add any vegetables, just make sure you adjust the number of eggs. You can also add some cheese to the top or substitute another kind of meat.
Chop/mince the onion, carrot and spinach. Add a tsp of olive oil to a pan and saute the vegetables for 5 min. Add this mixture to a greased cupcake pan, filling ten cupcake holes. Beat eggs with tuna until mixed, then pour over vegetables.
Bake at 350 F for 15-20 min, or until brown.
