Lighten up Stuffed Bell Pepper Casserole

1lb gr. beef, turkey or chicken1 1/2c green bell pepper1/2c onion2 cloves of garlic1/4 tsp salt1/4 tsp black pepper2c cooked brown rice 1c tomatoes diced1 (24oz) jar reduced sodium, no sugar added spaghetti sauce 1 1/2 c reduced fat shredded mozzarella cheese blend divided
1.Cook meat untill no longer pink. Drain grese then add peppers, onion, garlic, salt, pepper. Cook untill peppers become tender.
2.Preheat oven to 350
3. In a large bowl stiry together mean mixture, precooked rice, tomatoes tomato sauce, and 3/4c cheese.
4. Spread mixture into a 2 1/2 quart casserole. Sprinkle with remaining cheese
5. Bake 25mis or untill heated through and cheese is melted.
