I.) Sautee in Chicken Broth: 1/2 yellow onion 4 cloves of fresh garlic2.) Add and sweat in 1 inch of chicken broth: 3 whole leeks4 stalks of celery685 g white potatoes (about 2 big, 3 small) When Potatoes are soft add: 1 cup of 1% milk1/2 cup heavy whipping cream1/2 package of silken tofu1 tbsp of ground black pepper1 tbsp of Italian Seasonings1 tbsp of Salt (Add this if you used sodium-free broth like I did!) When you serve it add a dalop of whipping cream and 1/2 oz of grated cheddar cheese
