Kevin's Summer Salad

Ingredients
1 medium Red Ripe Tomato, cut into bite-sized pieces1/2 cup sliced Cucumber (with peel)1 small Onion, cut into bite-sized pieces1 tbsp. Extra Virgin Olive Oil1 cup Apple Cider Vinegar1 cup cold waterSalt and Pepper to taste (I prefer freshly cracked pepper)
Directions
Place all ingredients in a lidded bowl. May be served immediately but is better if allowed to refrigerate an hour or more before serving to allow the flavors to blend.
