baked potato soup

2 TB. butter2 TB. chopped garlic1/2 c flour1 tsp. bacon fat1/4 c. flavorless olive oil2 c. milk3 c. chicken broth2 c. half and half4 large baking potatoes1 tsp. hot sauce1 TB. parsley1 celery stalk chopped fine1 carrot chopped fine1/2 cup chopped fine onion1 1/2 c. extra sharp cheddar6 slices cooked bacon & crumbled3 TB. sour creamslat and pepper to tastepinch hot pepper flakes
In a large soup pot over medium heat add olive oil, butter, and bacon fat. When butter melts add carrots, celery, onion and garlic. Cook till fragrant. Then add flour. (if necessary add more oil) Cook for minute.
Gradually add milk, broth and half and half. Stir till it thickens slightly. Add hot sauce, parsley, bacon, cheese and sour cream. Reduce heat and simmer for 5 minutes. Add cooled potatoes ( skin on or off) and remaining ingredients.
