Spiced Cinnamon Apple Bread

2 cups white whole wheat flour2 cups of apples, peeled and dices (about 2 medium) 3 eggs, room temperature1 serving container of applesauce1/2 cup canola oil1/2 cup packed light brown sugar1/2 cup sugar 2 t. cinnamon1 1/2 t. baking powder1/2 baking soda1/2 salt salt1 t. vanilla extractTopping: 1/4 c. brown sugar1 1/2 t. cinnamon
Preheat oven to 350
Mix flour, cinnamon, baking powder, baking soda, and salt in a large bowl.
In a small bowl mix eggs, applesauce, oil, sugars and vanilla until combined
Stir two mixtures together until combined. Mix in apples, do not over mix.
Pour into baking pan.
Mix Topping and sprinkle on top.
Bake at 350 for 45-55 minutes until toothpick come out clean.
Remove to cooling rack and let cool. Run knife along edge of baking dish to loosen loaf. Transfer to plate and enjoy!
