Mexican Beans

6 cup of pinto beans1/2 medium yellow onion3 jalapeno pepper chopped without seeds or membrane3 cloves of minced garlic1 piece of bacon chopped up1 tbsp of oil
First make sure to wash the beans very well.
Soak the beans in plain water for at least 6 hours. Starting this step the night before is much better. Give the beans a final rinse and put it into a big pot. Add enough water to cover the beans completely. Add the rest of the ingredients and bring the beans to a boil. Once it boils, reduce heat and slowly cook the beans for about 2 hours. The soaking of the beans the night before preps the beans for faster cooking. Some people dont like to but I add garlic salt, regular salt, black pepper, and a pinch of baking soda. I can't explain what it does, it just makes the beans delicious. Make sure to slowly add in the salt, tasting as you go. Now you just have to cover the pot with a lid (or a plate since I don't have any). For the most part the beans cook on their own. Just check every once in a while to see if you need to add more water and salt.
