Pumpkin Spice Breakfast Quinoa

Ingredients
1/2 c milk1/2 c water1/2 c uncooked quinoa, rinsed and drained1/3 c pumpkin puree1 T pure maple syrup1/2 tsp vanilla extract1 tsp pumpkin pie spicepinch of salt
Directions
1. Bring milk and water to boil in a small saucepan.
2. Add quinoa, cover, and reduce heat to simmer. Let cook 15 minutes
3. Remove from heat and let stand 5 minutes.
4. Uncover, fluff with fork, then stir in pumpkin, maple syrup, vanilla, pumpkin pie spice, and salt. Adjust seasonings to taste.
5. Serve warm, adding milk if desired.
