Snow Pea Salad

Ingredients
200g (6 1/2oz) snow peas (mange tout),sliced diagonally1/2 red pepper (capsicum), sliced4 leaves oak leaf lettuce5 leaves green coral lettuce or any lettuce will do250g (8oz) cherry tomatoes60g (2oz) watercress springsParmesan cheese, to serveDressing2 tbl olive oil1 tbl lite mayonnaise1 tbl lite sour cream2 tbl lemon jice1 tsp soft brown sugarcracked black pepper
Directions
Serves 4-6

1. Wash the lettuce and tomatoes. Combine the snow peas, red pepper, watercress, lettuces and tomatoes in a large bowl.

2. To make Dressing: wisk all the ingredients in a small bowl for 2 minutes or until combined. Just before serving, pour the drewssing over the salad, strirring until well combined. Top with the parmesan chesse.

* Preparing Snow Peas
Pull any threads from the tails of the snow peas, then snap off the tops. Pull the tops down to remove the string from the side.
