Ground Turkey Barley Soup

Ingredients
1 tbsp. olive oil1 tbsp. minced garlic1 lb. ground turkey1 large onion1 32 oz. box reduced chicken broth1 cup white wine (chardonnay)1 bag frozen mixed vegetables1 can stewed tomatoes1 can petite diced tomatoes1/2 cup uncooked barley
Directions
In large pot, heat oil and minced garlic, add and brown ground turkey. Chop onion, add to meat. Cook until translucent. Add chicken broth, wine, mixed veggies, both tomatoes and bring to boil, reduce heat and simmer for a about 45 minutes to let flavors blend. Add barley.

medium barley - 40 mi. before ready to serve)

Serving Size: Makes about 6 large bowls of soup.
