1 onion, chopped1 clove of garlic, chopped675 g (1.5 lbs) carrots, sliced900 ml (1.5 pints / 4 cups) vegetable stockSalt and freshly ground black pepper1-2 tablespoons fresh coriander (cilantro), chopped1 tablespoon (15 ml) olive oil
1. Place the onion, garlic and carrots in a large saucepan. Add the stock and bring to the boil, then reduce the heat and simmer for 15 minutes until the carrots are tender.
2. Season with the salt, freshly ground black pepper and add the fresh coriander and olive oil.
3. Liquidize in a blender or food processor.
