Hearty Kale Salad (Eating Well 2011)

Ingredients
6C very thinly sliced kale2 hard boiled aggs2 slices center cut bacon2 T EVOO1/2C chopped sweet onion1.5C sliced white mushrooms2T red wine vinegar2T brown mustard1/4 t pepper1/8 t salt
Directions
Place kale and eggs in a large bowl. Cook bacon, drain- crumble. Add oil and onion to bacon drippings, cook for 2 minutes. Add mushrooms, cook 2 minutes more.

Remove from heat, stir in vinegar, mustard, pepper and salt. Pour the mushroom mixture over the kale and eggs. Add the crumbled bacon and toss to coat. Serves four.
