1 lb. Laura's 96% lean ground beef1-1/2 cups raw cauliflower florets1/2 cup raw zucchini, diced1/2 cup raw yellow squash, diced1/2 cup raw mushrooms, diced1 package McCormick brown gravy, low sodium
Brown the ground beef in a PAM-sprayed skillet. Add the diced veggies, and then add 1 cup cold water to the dry brown gravy mix. Mix well and pour over veggies in the skillet. Heat until the veggies are tender.
Meanwhile, cut the cauliflower into florets about 2 inches in diameter and place in a glass bowl and put water almost to the top. Microwave 10 minutes, remove and drain. Put the laughing cow in the bottom of NINJA, and the blend the cooked cauliflower florets. Do in two batches if necessary.
PAM-spray a deep pie plate, pour the ground beef and veggie mixture into it, and cover the top with the mashed cauliflower. Spread to cover. Bake at 350 for about 15-20 minutes or until heated through.
