Stuffed Pepper Soup

Ingredients
3 cups cooked brown rice1 lb lean ground beef1 chopped medium green bell pepper1 chopped medium red bell pepper1 chopped medium onion3 cloves chopped garlic2 14.5 oz cans petite diced tomatoes1 15 oz can tomato sauce2 cups low sodium, fat-free chicken broth1 tsp chili powder1 tsp salt1/2 tsp pepper1/2 cumin
Directions
1. Cook rice according to package directions.
2. In a large soup pot, brown ground beef and drain any remaining fat.
3. Reduce heat. Add peppers, onions and garlic. Cook until the veggies are slightly tender. (About 5 minutes)
4. Add in canned tomatoes, tomato sauce, chicken broth, chili powder, salt, pepper, chili powder and cumin. Bring to a boil.
5. Cover and simmer for 5 minutes.
6. Add in the cooked rice and simmer on low for 25 minutes.
