Grilled Vegetables with Peanut Sauce

Ingredients
2 red peppers, cut into 2 inch squares2 small zucchini, cut into 2 inch rounds1 japanese eggplant, cut into 2 inch rounds2 tablespoons olive oilSalt and pepper to taste1 cup peanut saucePeanut Sauce4 TBSP peanut butter, room temperature3 tablespoons warm water2 tablespoons soy sauce2 limes, juiced1 tablespoon ginger, minced1 teaspoon honey1 teaspoon sriracha sauceSalt to taste
Directions
Blend everything together till a smooth paste is achieved.

Coat the vegetables with the oil and sprinkle salt and pepper. Grill till the vegetables are soft and golden brown. Place the vegetables in a bowl and add one cup of peanut sauce. Mix well and serve as a side dish.
