Ingredients
2 lb chuck beef1 medium onion, diced1 large turnip, chunked1 lb carrots, peeled & chunked1 lb parnsips, peeled & chunked1 cup beef broth3 cups apple cider, dark & cloudy1 tsp salt1 tsp pepper1/8 cup flour
Directions
1. Fit liner in slow cooker.
2. Remove fat from chuck, cut in 2" cubes. Sear in pan with salt & pepper for 8 minutes. It's more effective if you do this in 2 or 3 segments to avoid over-crowding the pan. Add to slow cooker.
3. Soften carrots in pan with a sprinkling of flour. Add to slow cooker.
4. Soften parsnips in pan with a sprinkling of flour. Add to slow cooker.
5. Soften turnips in pan with a sprinkling of flour. Add to slow cooker.
6. Saute onions in pan. Add to slow cooker.
7. Add beef broth & apple cider to slow cooker.
8. Cook on High for 6 hours (I usually do this overnight).
9. Dish into 5 glass/ceramic tupperware containers. Not plastic - they will melt.
10. Once crock pot is empty of liquid, carefully remove liner (pot is hot). Throw the liner away and toss the crock pot lid in the dishwasher - your kitchen is now clean!
