Special K Baked Pork Loin Chops

Ingredients
6 lean center-cut pork chops, 1/2" thick (4oz each) 1 cup evaporated skim milk1 1/3 cup Special K, crushed to 3/4 cup crumbs1/4 cup fine dry bread crumbs4 teaspoons paprika2 teaspoons oregano3/4 teaspoon chili powder1/2 teaspoon garlic powder1/2 teaspoon black pepper1/8 teaspoon cayenne pepper1/8 teaspoon dry mustard1/2 teaspoon saltas needed nonstick spray coating
Directions
1. Preheat oven to 375.
2. Trim all fat from chops.
3. Place chops in milk. Let stand for 5 minutes, turning once.
4. Meanwhile, crush cereal and mix together with bread crumbs and spices.
5. Spray a 9x13 baking pan with nonstick spray, or line with Release foile for easy clean-up.
6. Remove chops from milk. Thoroughly coat with crumb mixture.
7. Place chops in pan and bake for 20 minutes. Turn chops and bake 15 minutes longer or until no longer pink.

    This is delicious. The oregano as a seasoning was terrific. I gave the chops a spritz of nonstick spray after turning them over for extra moistness and crispiness. The chops were moist and the flavor was wonderful. - 9/1/14
