Soft tofu veggie breakfast burrito

Ingredients

2 cloves garlic chopped1/4 to 1/2 a med green bell pepper chopped1/4 med orange pepper (or yellow/red) chopped1/2 cup to 1 cup spinach chopped1-2 mushrooms chopped1-2 stalks of green onion/scallions chopped1/2 cup soft tofu drained and cut upcheddar cheese (I like applewood smoked)1/2 tsp cumin powder1/4 tsp chili powder1/4 tsp red pepper powderdash Cholula red pepper sauce2 small fajita size or 6 in size tortillasoptional:sour cream or alternative
-spray a non stick pan with olive oil (uses less oil if in spray form)
-heat to medium/high heat
-add chopped garlic-cook 1-2 minutes
-add all bell peppers, cook until soft (2 minutes)
-add the rest of the vegetables and spices, blend in the pan and heat (2-3 minutes or until spices are very fragrant)
-add the tofu and using a spoon or spatula, "crush"/"smoosh" the tofu into small pieces similar to very scrambled eggs
-add the hot sauce to taste and heat everything through (5 minutes or less)
-add your cheese and turn heat off or turn to low, heat until melted (1-2 minutes)
Set aside and reheat another pan (or remove the filling and clean/then reheat the pan over medium/high heat)
-add the tortillas one at a time, flipping and heating them through.
-remove from pan and add your filling, making burritos. **if you want to add sour cream, add it by smearing on tortillas before you add the filling.
