For Quinoa:3 cup Red Quinoa3 cup Chicken Broth3 cup waterFor Vegetables:1 small Onion1 clove Garlic1/2 cup Frozen Peas1 cup chopped Lightly steamed Broccoli2 medium chopped Carrots1/2 sliced Green Pepper2 tbsp Red Pepper/ Cayenne Pepper1 tbsp Soy Sauce2 diced Scallians5 sliced in half Chili PeppersOptional:1 tbsp Hot Sauce or Sriracha Sauce
Cook quinoa in water and chicken broth
Fry vegetables in pan
Add soy and/or sriracha sauce to vegetables and continue to fry
Fry egg in same pan as vegetables
Add quinoa to stir fry
Add diced scallions and cook for additional minute
Plate and enjoy
