t tomato soup

Ingredients
2 tsp. olive oil5 large beef tomatoes1 onion 2 cloves garlic1 basil cube/fresh basil not chopped3/4 cup light soymilk/milk1 28 oz. can of whole or diced tomatoes1.5 cups chicken stockDash of balsamic vinegarSalt and pepper
Directions
Preheat oven to 400 degrees Fahrenheit. Cut tomatoes in half and place them face down on a baking sheet. Spray with non stick cooking spray, sprinkle with salt and pepper and balsamic vinegar.
Roast tomatoes for about 25 min.

Dice onion and sauté in olive oil for 5 min. Add garlic for 1 more min. Pour in your canned tomatoes and chicken stock and let it cook for 20 min on med. heat.
Add in your basil stock or basil cube with the roasted tomatoes and cook another 10 min. if you used fresh basil remove and discard. Turn off the heat and add soymilk. If you feel it necessary add 2 tblsp. sugar.
