Slow Cooker Sweet Potato, Chicken, & Quinoa Soup

1 1/2 lbs. boneless skinless chicken breasts1 cup Quinoa, rinsed well2 Large Sweet Potatoes, 3 1/2 cups cubes1 cup black beans, soaked in cold water1 can petite diced tomatoes1 tsp. minced garlic1 Tbsp. Chili powder5 cups chicken broth'1 cup yellow sweet corn, thawed
Spray the slow cooker with nonstick spray. Remove fat from the chicken breasts and put them into the slow cooker along with the rinsed quinoa.
Remove the skins and chop the sweet potatoes into cubes, adding into the slow cooker.
Rinse the black beans and add those in. Add in the undrained petite diced tomatoes, minced garlic, chili powder, corn and chicken broth.
Place on high for 3 to 5 hours, depending on how your crockpot is.
Using two forks, shred the chicken and stir all the ingredients together.
Add salt and pepper to taste and parsley if desired.
