Thousand Island Dressing

Ingredients
3 Tbsp low fat mayonnaise3 Tbsp non fat yogurt2 tablespoons ketchup, no added salt2 tablespoons fresh lemon juice2 tablespoons minced red bell pepper1 tablespoon minced onion1 tablespoon minced fresh parsley leaves1 tablespoon sweet pickle relishPinch cayenne pepper1/4 cup water
Directions
In a blender or food processor blend all ingredients until smooth, adding up to 2 tablespoons additional water, if necessary, to thin to desired consistency. Dressing keeps, covered and chilled, for 1 week.
