Quick Jambalaya

Ingredients
1 cup rice, cooked1 oz salad shrimp1 yellow bell pepper, diced1 cup red onion, diced2 small carrots, diced2 small celery stalks, diced1/4 cup tomato saucesalt and pepper to tastehot sauce to taste2 tsp margarine1 tsp oil
Directions
Melt the margarine in a skillet with the oil. Add the onions, celery, bell pepper and carrots. Cook over medium heat until carrots are just soft. Add the salad shrimp, tomato sauce, salt, pepper and hot sauce. Add just enough water to create a boiling liquid. Let simmer for about 2mins. Turn off heat and add rice. Stir to coat with all of the sauce. Serve.
