3 cups pulp (I like carrot, apple, beet)3 tbsp Raw Honey1/3 cup King Arthur Gluten Free Flour1/3 cup Oat Flour2 Eggs3 Tbsp Pure Maple Syrup1/4 cup Olive Oil1/4 cup of the juice2 tsp baking sodaSpices and salt to taste:2 Tbsp cinnamon1 tsp clove1/5 tsp nutmeg1/2 tsp allspice1 tsp vanilla1 tsp salt
Preheat oven to 380 degrees fahrenheit. Mix all ingredients together and portion into prepared muffin sheet - I spray mine with coconut oil. Bake 35-40 minutes, or until muffins are firm to the touch.
