Z Moroccan Chicken, Lentils and Chickpeas

Ingredients
1 lb. lean ground chicken1 large onion, sliced1/2 cup celery, diced1 tbsp olive oil2 tsp tumeric2 tsp ground ginger1 tsp ground cinnamon1/2 tsp ground nutmegsalt and pepper to taste1 28 oz can diced tomatoes1 1/2 quarts water or stock2 cups cooked garbanzo beans1 cup red lentils (dry)1/2 cup bulgur (dry)2 cups frozen spinach
Directions
Cook chicken, onion and celery in olive oil until the chicken loses its pink color. Add all remaining ingredients but spinach and simmer for 90 minutes.
Stir in spinach, and heat through.
