Peppermint Candy Cookies

1 tbsp Crisco Butter Flavored Shortening,.5 cup Granulated Sugar, .5 cup, packed Brown Sugar,2 large Eggs,1 tsp peppermint extract, .5 tsp Vanilla Extract, 2.75 cup Flour, white, 1 tsp Salt, .5 tsp Baking Soda, 16 tbsp or 1 cup Peppermint Crunch (crushed peppermint candies 15g)
In a mixing bowl, cream shortening and both sugars. Add the eggs, one at a time, and beat well after each addition. Add both extracts. Combine dry ingredients and gradually add to the creamed mixture. Stir in candies. Shape into a 15-in. roll; wrap in plastic wrap. Refrigerate for 4 hours or until firm.
Unwrap and cut into 1/8 in. slices. Place 2in. apart on a cookie sheet. Bake at 375 for 6-8 minutes or until edges begin to brown. Remove to wire racks to cool. Enjoy!
