Donut Muffins

Ingredients
2 cups sugar2/3 cup shortening2 eggs1 cup milk3 cups all purpose flour3 tsp baking powder1 tsp salt 1/2 tsp nutmegtopping:1/4 cup melted margarine1/4 cup sugar1 tsp cinnamon
Directions
Preheat oven to 375 degrees.

Cream together in large bowl:
2 cups sugar
2/3 cup shortening
2 eggs
1 cup milk


Mix together in a separate bowl:
3 cups all purpose flour
3 tsp baking powder
1 tsp salt
1/2 tsp nutmeg


Combine ingredients in both bowls together and mix thoroughly. Spoon into greased muffin tins (or use paper baking cups to save time), each just over half full. Bake 20 minutes or until tops are lightly browned. While still warm, roll the top of each muffin in 1/4 cup melted margarine, then in a mixture of 1/4 cup sugar and 1 tsp cinnamon. (these 3 might need to be adjusted according to need)

These take only 10 minutes or less to put together and are really good. Kids and adults LOVE them!

    I loved this recipe! Here are the following tweeks I made: i used whole wheat flour, egg whites, unsweetened almond milk. I mixed the glaze ingredients together and poured it on each muffin while still hot in pan. LOVED it this way =) thanks for sharing! - 9/4/11
