Coconut Flour Butter Cookies

Ingredients
10 Tbsp. Coconut flour6 Tbsp. Quinoa Flour1/4 cup Honey1 egg1 tsp. Baking soda1/4 cup Butter, softenedzest of 1/2 lemon
Directions
Blend honey and butter together using a hand mixer, add egg and continue beating until smooth. In a small bowl mix baking soda, flour and zest together. slowly add flour mixture until soft and pliable. Roll out on parchment paper, dusting with a little four as needed
(but don't overdo it or they will be dry) Bake at 350 for 6-8 minutes, carefully transfer to wire rack to cool. You may need to put dough in fridge to firm up for rolling.
