Frittata - Smoked Turkey Sausage and Mushroom

6 Large Eggs1 cup 2% Shredded Mexican Cheese1 cup diced mushrooms1/2 diced onion3.5 Servings (one large link) Eckrich Smoked Turkey Sausage3 TBSP Butter SpreadBlack Pepper to tasteSalt to Taste1 TBSP Parsley (fresh or dried)
Prehear oven to broil.
In a nonstick skillet (must be oven safe), sautee onions, mushrooms, and smoked turkey sausage in 2 TBSP butter or margarine until cooked.
In a bowl, scramble the eggs and 1/2 of the cheese (approx 1/2 cup), salt and pepper.
Over med-high heat, add the egg mixture to the sautee pan with the other ingredients. Quickly stir it together, and then let it sit and cook. Let it cook until the eggs are solidifed on the bottom and start to solidify on top.
Add the reminaing cheese and parsley. Put the skillet in the oven for another 3 to 4 minutes until the top turns golden brown.
Serving Size: 1/6 of skillet
