Cottage Cheese Pancakes w/Mozzerella

Ingredients
1 c cottage cheese (1%)3 eggs2 oz mozzarella cheese, grated3 T almond meal/flour, Bob's Red Mill2 T coconut flour, Bob's Red Mill organize high fiber1 T whole wheat flourSalt & Pepper to taste
Directions
Mix ingredients well. Using large soup spoon, spoon large scoop into medium-hot grill sprayed w/non-stick spray. Spread out gently w/spoon to about 1/4" thickness. Let brown nicely before turning to brown on other side. Butter and enjoy! Can drizzle a little sugar free syrup on if desired.
