Meat Loaf

Ingredients
24 oz lean ground beefSmall carrot, grated1/2 c chopped celery3/4 green bell pepper, chopped1 egg2 ounces panko crumbsSalt and pepper1/8 cup relish or BBQ sauce
Directions
Form a loaf with all ingredients but Parmesan and half of the bread crumbs. Top with remaining crumbs and Parmesan. Bake at 370 for about 1 hour or until cooked through.
